Welcome back! Our Christmas was wonderful and we are still enjoying time off of school and work. Our house looks like a Lego factory threw up all over the living room but my boys are in heaven
Today, I have a delicious Baked Potato Soup Recipe to share with you. I made this recipe a couple weeks ago and we loved it. It is a very creamy, cheesy potato soup. The Dutch Oven Bread recipe that I shared last week goes perfectly with this soup!

Scale
Ingredients
- 5 lbs russet potatoes, diced, NOT peeled
- 5 tablespoons Garlic
- 1 large yellow onion, chopped
- 64 ounces chicken broth or stock
- 16 ounces cream cheese
- bacon, sour cream, chives or shredded cheese for garnish
Instructions
- Combine first 4 ingredients in your crock pot, cook on low for 8 hours or on high for 5.
- Purée soup in food processor with cream cheese.
- Serve warm topped with bacon, sour cream, shredded cheese & chives.

I was looking for easy crock pot recipes that do not take a lot of prep work! This recipe is perfect. We are having it for dinner tonight and I just had a spoonful to taste the base of it and it is delicious.

Sure! It may be a little chunkier, just mash it best you can!

We often make potato soup, but I never thought to add cream cheese {we add it to mashed potatoes though}… This looks delicious!

If you’re in a real time crunch….I think you could use frozen hash brown (diced-style) for the poatoes. I buy them in 2# bags at Koger.

Do you have a scaled down version for the ingredients? I only live with my fiance so we don’t need that big of a crock pot’s worth, maybe just for a little bit of leftovers. This looks so amazing! I might make it this weekend! 🙂

Sorry, Meredith! It’s Tastefully Simple Garlic Garlic but I have used just Garlic and adjusted the recipe with that. I didn’t think about when I typed it up. Sorry!
